Try at home: Stinging Nettle and Wild Garlic fritters


This one is a little bit of a free-style that we experimented with during our Wild Tots sessions, but they went down a treat with the children and grown-ups, so we thought we would have a go at sharing how we made them!

Ingredients:

  • a handful of wild garlic, washed thoroughly
  • a bunch of stinging nettles, picked and washed carefully!
  • one cup of plain or self raising flour
  • a tablespoon of water
  • a pinch of salt

Method:

  1. Carefully remove the nettle leaves from the stem, then chop into small pieces
  2. Boil the nettles in a pan for 2 mins, drain and put in cold water
  3. Chop the wild garlic
  4. Mix together the leaves, add a pinch of salt if desired, and gradually add flour until you reach a batter like consistency – you can add a splash of water if needed
  5. Roll batter into balls and squash into patties
  6. Fry in a little oil until golden on both sides
  7. Leave to cool and enjoy
