Forest Fact: Edible Young Beech Leaves

Beech leaves are deliciously edible and have a pleasant citrus/salad taste. A great salad addition and easy to pluck off the trees.

We’ve been loving seeing the beech trees at our camp coming into leaf in the sun this week! The young translucent leaves are a glowing lime green colour and light up the camp at this time of year before the other trees come into leaf.

The best thing is that beech leaves are deliciously edible and have a pleasant citrus/salad taste; they can be used as a good salad green in springtime and are easy to pluck off the trees as you wander by.

Keep your eyes peeled next time you see a beech tree coming into leaf. Yum!
