BILBERRY CAKE RECIPE


Bilberries make a wonderful addition to cakes and scones. To make your own bilberry cake you will need the following ingredients:

  • 1/2 cup – Bilberries
  • 1 1/3 cups – Self raising flour
  • 1 cup – Caster sugar
  • 1/2 teaspoon – Bicarb of soda
  • 3 tablespoons – Sunflower oil
  • 1 cup – Milk (dairy or plant)
  • 1 tablespoon – Golden syrup

Method:
1) Mix the dry ingredients together
2) Mix the wet ingredients together and then add them to the dry ingredients
3) Pour the mixture into a cake tin or skillet pan and gently press the bilberries onto the top of the mixture
4) Cook for 10 – 15 minutes on low/medium heat
